Quinoa salad with feta, mint and peas by Zonderzooi

Ingredients

Salad

  • 300 gram peas
  • 200 gram quinoa
  • A few handfuls of spinach
  • 120 gram feta
  • 80 gram pecans
  • 1 handful mint

Dressing

  • Juice of 2 lemons
  • 1 tbs maple syrup
  • 1 tbs olive oil

Directions

  1. Boil the peas and the quinoa as described on the package. Add salt to taste.
  2. Wash both with cold water.
  3. Spread the spinach over four plates. Add the quinoa and the peas and garnish with mint, pecans and feta.
  4. Make the dressing by combining the lemon juice, maple syrup and olive oil. Add dressing to your salad to taste.

Cheeseburger salad by Budget Bytes

Ingredients

Salad

  • 1lb ground beef
  • 1/2tsp seasoning salt
  • 1Tbsp cooking oil
  • 2hearts of Romaine
  • 1/4red onion
  • 1large tomato
  • 2oz cheddar cheese, shredded

Dressing

  • 1/2cup mayonnaise
  • 1/4 cup ketchup
  • 1Tbsp olive oil
  • 1Tbsp Relish (sweet or dill)
  • 1/2 Tbsp apple cider vinegar
  • 1/2 tspsugar
  • 1/4tsp salt
  • Freshly Cracked Pepper

Directions

  1. Prepare the animal sauce dressing by stirring together the mayonnaise, ketchup, relish, cider vinegar, sugar, olive oil, salt, sugar, and some freshly cracked pepper in a bowl. Set the dressing aside.
  2. Rinse the Romaine lettuce well, let it drain, and then cut it into 2-inch pieces. Set the prepared lettuce aside.
  3. Place the ground beef in a bowl, add the seasoning salt, and mix with your hands until the seasoning salt is evenly incorporated. Divide the meat into four portions, then divide each portion into four small ping-pong-sized balls. Flatten the balls into mini burger patties.
  4. Add a little cooking oil to a non-stick skillet and heat over medium flame. Once hot, add some of the mini burgers and cook on each side until well browned (3-5 minutes each side). Transfer the cooked burgers to a paper towel lined plate and cook the next batch.
  5. While the burgers are cooking, thinly slice the red onion, cut the tomato into wedges, and shred the cheddar cheese.
  6. Once all of the mini burgers are cooked, build the salads. Place 1/4 of the lettuce in each of four large bowls and sprinkle the sliced onion and shredded cheddar over top. Add tomato wedges to each bowl along with 3-4 of the mini burger patties. Drizzle the animal sauce dressing over top and enjoy!

Asian cauliflower rice salad by Every Last Bite

Ingredients

Salad

  • 2 cups cauliflower couscous 1 small head cauliflower
  • 1 cup grated red cabbage
  • 1/2 cup yellow pepper cut into small pieces
  • 1/2 cup red pepper cut into small pieces
  • 1 cup grated carrots
  • 1 cup cucumber cut into small pieces
  • 1/3 cup coriandor
  • 1/2 cup green onions chopped

 Dressing

  • 2 tbsp sesame oil
  • 1 clove garlic
  • 3 tbsp peanut butter or cashew butter for paleo
  • 3 tbsp coconut aminos or tamari
  • 2 tbsp lime juice
  • 1/2 tsp honey or other sweetener
  • 1 tbsp grated fresh ginger

 Directions

  1. Cut the cauliflower into small pieces and place in a food processor or hand held blender.The cauliflower will break into little bits within 10 seconds, continue blending until it has all broken down to the same size and should resemble couscous. Depending on the size of your machine you may need to do this in batches. Place the couscous in a bowl
  2. Top the cauliflower with the peppers, red cabbage, carrots, cucumber, finely chopped green onions and coriander
  3. In a blender combine the ingredients for the dressing and blend until smooth
  4. Right before serving toss the salad with the dressing. Enjoy!
