Healthy apple cake

We love apple pie. Let’s be honest, who doesn’t? It’s the perfect guilty pleasure to enjoy in the sun on a terrace during these first spring days. This recipe by Chicks Love Food is a healthier version of the classic apple pie, it’s actually more like an apple cake. It’s absolutely delicious!

Ingredients for 1 apple cake

  • 3 apples (sweet)
  • 2 handfuls raisins
  • 3 teaspoons cinnamon
  • 2 tablespoons honey
  • 300 grams spelt flour
  • 1 tablespoon baking powder
  • 2 eggs
  • 3 dates
  • 250 ml almond milk
  • 2 tablespoons olive oil (and some extra to grease the tin)

 

Directions

  1. Preheat the oven to 200ºC
  2. Peal 2 apples and cut them into cubes
  3. Mix them together with the raisins, cinnamon and 1 tablespoon honey
  4. Put the flour, baking powder, eggs, dates, almond milk, the other tablespoon honey and 2 tablespoons of honey in a kitchen machine. Mix till you have a sturdy, creamy substance.
  5. Mix the batter and the apple/raisin mixture together.
  6. Cover the bottom of the spring form with baking paper and grease the sides.
  7. Put the batter in the spring form and make sure it’s pressed tightly.
  8. Cut the last apple into slices and put them on top of the batter.
  9. Time to put the cake in the oven! Bake until nice and golden, this should take about 35 minutes. The cake is ready when you can put a skewer in and pull it out clean.
