Spring rolls with smoked salmon and avocado

We LOVE these springs rolls. Not only do they look extremely cute and happy, they also taste delicious. Because they are not fried, they’re even healthier than the spring rolls you might know. This version comes from Vietnam and the recipe comes from My Food Blog. Let’s get started! 


  • 1 batch rice sheets
  • 100 gr smoked salmon
  • 100 gram sprouts
  • 1 avocado
  • 1/2 cucumber
  • 2 spring onion
  • 1 carrot
  • 3 leaves coriander
  • 3 leaves mint


  • 2 tbs soy sauce
  • 1 tbs sesame oil
  • Juice of 1 lime
  • 1 cm fresh ginger (chopped)


  1. Make the sauce by mixing the sesame oil, soy sauce, lime juice and ginger.
  2. Cut the cucumber and carrot in long, thin strings. Do the same to the spring onion and the avocado.
  3. Put a rice sheet in water, turn it around and take it out immediately.
  4. Put the sheet on a plate and cover 1/3 with sprouts. On top of that put a slice of avocado, cucumber, spring onion and a but of salmon. Roll over once and fold the outsides in. Put some coriander and mint leaves on the spring roll and fold the rest.
  5. Repeat until your filling is done.
  6. Dip in the sauce and enjoy!
